Multiple Meals

Ok- so a friend of mine came over on Friday night and helped me to prepare meals for a month! Some of you may know her, you can check out her blog at here: Erb House Life

She actually has a couple of posts relating to cooking meals for a month! So since she is much more of an expert at it than i am, she was gracious enough to come over on a Friday night and help me out!

We started about 6:30pm and went until 9:30pm and when we were done, we had 21 meals prepared and ready to freeze! WOW!

Of course now that i think back- i'm thinking- where was my camera when we were doing all this, and had them all neatly stacked on the counter! oh well... i did try to take a couple of pictures of them stacked in the freezer; but that was a little hard... but here are a few...


On the left here - the middle shelf shows 2 zip lock backs- frozen flat (a GREAT way to store frozen meals)- one is a chicken pot pie filling and one is chilie.
One the right here- hopefully you can see a STACK of aluminum oil covering 5 casserole dishes of different meals. Things like Pork BBQ Mashed Potato Casserole, Chicken Manicotti, Tater Tot Casserole,Chicken & Stuffing Casserole...


There were several more- that were too tough to get photos of like chicken enchiladas, Husbands Delight, Chicken Tetrazinni, Poppyseed Chicken, Meatloaf, Sloppy Joes, Beef Stew, Beef Tips, Indonesian pork, etc.... SHEW!


Am i glad that is done! But, really I AM GLAD it's done and i now have all the meals in the freezer that i can pull out and put in the over, and meals my husband can pull out and put in the oven or crock pot without further instruction :), when i'm too tired, or too busy, or just don't feel like cooking! What another huge blessing!


Thanks Yo! For coming and staying! Even when you had family crisis mode at home, you stuck it out w/ me to finish them off... I'm so excited... hope to repay the favor one day!

Shower #2

Talk about being blessed and loved on!

Matt and I travelled to PA over Easter Weekend and the Landis family totally blessed us! Matt's Mom and Sisters, and our Sister-in-Law all threw us a baby shower at his parents house on Saturday! Even with it being Easter weekend, we had a nice turn-out. Friends of Matt's from school days and family came to shower our baby with more gifts than i imagined! AND of course more food :) They had prepared a large meal for everyone to have together after the shower.

Yup- it's a tiny little BRONCOS onesie! How cute is that?!

A New Beginning

Well Matt has officially started his new position with Americast. He has previously been their Controller (a money guy) for the past three years. He started that position just about the time we got married. So then he was offered a new position with more potential for growth within Americast, so he thought he'd take this position about the time our first born is due! You know us, we can't ever do just one big thing at a time :)

Matt's boss has been pursuring him to groom him for a GM position with their company, so just this week he started his training for this endeavor. He is techinically going to be an Assistant GM for now. But his training will last 8 months; the first 4 of those are in the yard doing various tasks. Like this week, Matt is training in the welding shop! Now this is an adjustment- he is working 5am to 2pm in the welding shop; and then heads up to his office to check in on other managerial duties... but getting up at 4am is no piece of cake! (I'm thankful that's only a week). Next week he'll be working in Quality Control and starting at 6am, so that's a little better!

I think he is enjoying this newness, he is always one up for a new challenge; especially in his career. I know he's looking forward to learning all the new things about the operations side of things and taking advantage of opportunities as they arise within his company. He is working for a great group of folks that are willing to invest in him and he has continually received favor from them.

We do not know where this new position will lead in the future, (ie: after 8 months); but we wait and trust the Lord to put us where he wants us- whatever that looks like! The Lord has already worked 'miracles' for Matt with this company so we wait with excited anitcipation to see what He's up to next!

Nice Surprise

We went for another ultrasound today and our technician blessed us with a couple 4D pictures! WOW! SOOOOO amazing - here ya go :)

The baby is weighing in at 3.4 pounds and we are in the 61st percentile.... everything is lookin good.

Week 28

* some of you may notice i changed this from 29 to 28 weeks- it's getting hard to keep up w/ where i am! :) But 28 weeks is more accurate for this time frame! :)

Today in History

Yup, well today in history is a busy one indeed!

I think it sort of 'out of the ordinary' to know so many people that i share a birthday with! How many people do you know personally, that you share your birthday with?

Do you think we're mostly summer vacation babies? hmmmmm

Well, to-date i can think of 6 people I know that I share this day with to celebrate our birthday:

Lourdes- who not only shares the March 5th date with me; but also the birth year!!! So that one is pretty right on!

Baby Shower #1

Well i have to tell ya... i just felt so loved and blessed on Sunday. my office gave me a baby shower, so the ladies from the office and most of the wives of the guys in the office came and showered me with so many great gifts for baby landis! What a tremendous blessing...we had a great time just fellowshipping and prayer and of course eating!
A friend of mine made my cake- her business is Delectable Creations- in case you're interested.... but check out this cake she made!!! It's Red Velvet on top of how cute it is... so it was an awesome cake!

And... the office purchased our crib for us! So Matt and I started putting it together last night; not completely done yet...but soon the nursery will be 'done' - only needing a little baby to fill it up!

Kudos to Michele for having all my favorite foods at the shower; Codi's chicken salad (she has a little shop in Bridgewater- and she makes awesome chicken salad), pimento cheese sandwiches, fritos, grapes, deviled eggs, red velvet cake... mmmm....mmmmm....mmmmm :)

So thank you soooo much to everyone that was somehow a part of this event!
